Producing wine is a question of guiding natural processes. All of the world’s wines are the product of a spontaneous natural phenomenon: alcoholic fermentation, i.e. the transformation of grape sugars into alcohol by yeast that is naturally present in the grapes. The process involves three key stages: vinification, maturing and ageing, which are carried out in different places.

  • Vinification is carried out in the vat room: an indispensable stage in the production of all types of wine, this is when the grape juice is turned into wine through fermentation.
  • The winery is where the wine is matured, often in oak barrels. This phase varies in length and allows the wine to develop its aromas and structure.
  • The cellar hosts the ageing in bottles: the wine develops and matures over time before reaching its full potential.
